Heat the oven to 260°.
In your mixer bowl, combine the first 6 ingredients and mix well with a fork.
Add the oil and start mixing, gradually add water until you obtain a soft and homogeneous dough, continue to knead for at least 10 minutes.
Lightly oil the bowl and dough, cover with plastic wrap and leave to rest until doubled in size, this will take about an hour depending on the temperature of your kitchen.
Take out the dough, cut it into 4 equal parts, shape each part into a ball, cover and leave to rest for 10 minutes.
Roll each ball into a circle 1.5cm thick, cover and let sit until you have finished the rest of the balls.
On your work surface, carefully turn each loaf over to the other side so that the side that was on the counter is now facing up.
Brush with egg and sprinkle with sesame seeds or Za’atar.
Bake for about 2-3 minutes until the mixture rises nicely and the top is lightly browned.
Take it out of the oven and, using a spatula, remove the bread from the rack and let it cool completely.
Give your oven 2 to 3 minutes to return to high temperature before placing the next loaf in it.
