In a bowl, mix the flours, sugar, salt, egg yolk, softened butter and water then add the yeast mixed with a little water.
Mix with a spatula for 2 minutes then add the diced apple and the chocolate chips.
Mix and knead again until you have an even consistency.
Bring the dough into a ball, put it back in the bowl and cover with a damp cloth.
Leave to rest in a warm place for 45 minutes.
Divide the ball into 12 equal parts, each around 60 g in weight, then cover and leave to rest for 10 minutes.
Shape into small buns, put them on a baking sheet, cover and leave to rest for 60 minutes.
Bake for around 15 minutes in an oven preheated to 200°C.
