Sfenj with Sugar and Honey

Safanj, is a Maghrebi doughnut: a light, spongy ring of dough fried in oil.

 1 sachet of Saf-instant yeast
 250 g Flour
 1 tbsp Sugar
 Salt
 150 ml Warm water
 Oil for deep frying

Mix the yeast, sugar and warm water in a bowl. Leave for 10mn.

In a large mixing bowl, combine the flour, salt and the water and yeast mixture. Mix well, cover with a clean cloth and leave the dough to double in volume for 3 to 4 hours.

Heat the oil. With slightly oiled hands, take a piece of dough the size of an egg, make
holes with your thumbs, make a ring and put it in the smoking-hot oil.

Repeat with the other sfenj, turning them in the oil to make sure they are golden brown on both sides.

Remove and place on paper towels. Serve sprinkled with sugar or dripping in honey.
