Patty with Spinach and Feta Cheese

Mixture of spinach and cheese which is known as spanakopita is well recognised and loved

For the Dough:
 11 g Saf-instant yeast
 750 g Flour
 40 g Olive oil
 1 Egg
 450 g Water
 10 g Salt
 100 g Olive oil for roll the dough
For the ingredient
 2 kg Spinach
 2 Onion
 20 g Salt
 250 g Feta cheese
 170 g Olive oil
For the sauce:
 300 g Yoghurt
 170 g Olive oil
 1 Egg

In a bowl, mix the dough ingredient and knead until the dough is homogeneous. Divide the dough into 7 equal pieces and roll. Cover with a damp towel and let rest for 20 minutes.

Rest the dough on the greased floor. Spray the olive oil on the dough and toll about 25x25 cm with your hand. Rest the dough for 20 minutes.

On a greasy surface, press each dough slightly to the both sides with your hands to make a large and thin dough.

Spread the spinach mixture over the dough and roll in the form of rolls.

Put the dough onto the oiled tray, cover with a clean towel and let the rest the dough for double size for 1 to 1.30 hours in a room temperature. (25°C -28°C)

Spread the sauce mixture on the dough.

Bake the dough in a preheated 200°C-220°C oven for 30 to 35 minutes.
