Cheese Pastry with Wheat Flour

Union of fresh tastes with cheese and parsley

For the dough
 2 tbsp Saf-instant yeast
 250 g Whole wheat flour
 250 g White flour
 100 ml Water
 200 ml Light milk
 50 g Olive oil
For the filling
 200 g Light cheese
 35 Branch green onions
 35 Branches of parsley
 3 tbsp Olive oil
For the sauce
 1 Egg
 1 Glass of yoghurt
 35 tbsp Olive oil

In a bowl, mix all the dough ingredient knead until the dough is homogenous.

Divide the dough into 4 pieces, roll and let rest for 10 minutes.

Roll each dough pieces of about 30x30 cm with a roller.

Pour 3 tbsp of olive oil onto the 1st dough, then put the 2nd dough piece onto the 1st dough.

Pour olive oil onto the 3rd dough, then put the 4th dough piece onto the 3rd dough. Let the dough rest in a warm place for 10 to 15 minutes.

Put the first two doughs together according to the size of the oven top and place it in the greased tray. Add the cheese filling onto the doughs.

Then place the other two doughs on top.

Cover the dough with a damp towel and let the dough rest in a room temperature 25°-28°C for 1 to 1.5 hours.

In another bowl, whisk together the yogurht, egg and olive oil and spread the mixture on top of the dough. And sprinkle the black sesame.

Preheat the oven to 190°C -200°C and bake until hot and crusty on top, about 25-30 minutes.
