Whole Wheat Lavash Bread

Saf-instant Red 11g
For the dough:
1 sachet Saf-instant 11g / 1 tbsp Saf-instant 125g
2,5 cups whole wheat flour
1 cup + 1 tea glass of rye flour (187,5g)
2 tbsp of oat bran (12,5 g)
2 tspt salt (7,5g)
1 cup + 1 tea glass water (320 ml)
Preparing steps:
1-Mix all ingredients in a bowl and mix until get a homogeneous mixture and let rest for 10 minutes.
2-Divide the dough into 90g pieces and roll. Then cover with a clean towel and let rest for 5 minutes.
3-Roll out the dough with a rolling cylinder of a plate size (Not recommended to use use too much flour).
4-Cover the rolled dough pieces with a thin cloth and let rest 15 to 20 minutes.
5-Heat the large teflon pan on the stove and cook both sides of the lavash.
Tips: Put your cooked lavash on top of a cloth and wrap it so that it does not dry out.
