Madeleines with candied fruit

Saf-instant Red 11g

2 tsp of yeast saf-instant
200g flour
1 pinch of salt
120g sugar
1 sachet of vanilla sugar
2 tbsp honey
180g butter
6 eggs
150g diced candied fruit

Beat the 6 eggs with the sugars, salt and honey.
Add the melted butter, flour and yeast and the candied fruit.
Leave to rest in the fridge for 20mn. Bake in buttered Madeleine moulds in a preheated oven at 220°C for 5 minutes, then at 200°C for 12 minutes.
