Your Saf helper for this recipe:
- 1 sachet Saf-instant yeast 11g
- 500g flour
- 40g sugar
- 40g butter
- 1 egg
- 150ml milk
- 30ml lukewarm water
- 1 pinch salt
- 500g oil for frying
1- In a mixing bowl, combine the egg with sugar, melted butter, flour, salt and Saf instant yeast until a smooth, supple dough is formed.
2- Leave to rest for 30 mins in a warm place until the dough has doubled in volume.
3- Once the dough has risen, place it on a worktop and punch down once firmly to remove air.
4- Cover with a clean tea towel and leave to rise again for 3h.
5- Now, work the dough quickly to remove excess air and then divide it into 12 balls.
6- Make a hole in the centre of each ball and swirl dough around your finger for 10 seconds to create a ring doughnut shape.
7- Heat oil to frying temperature.
8- As soon as it bubbles plunge doughnuts into oil in batches of three or four (they should fall to the bottom then rise to the top almost immediately).
9- Allow to cook for 2 mins, turn them over and leave to cook for another minute on the other side.
10- Remove from frying oil and allow excess oil to drip off on absorbent paper.
11- Sprinkle with sugar and serve.
